Chicken Parmigiana

Serves 4

Ingredients

  • 4 Chicken Breasts, boneless and skinless, pounded
  • 1 Cup Breadcrumbs, seasoned
  • 1/4 Cup Parmigiano Reggiano Cheese, grated
  • 1/2 Cup Flour
  • 2 Eggs, beaten
  • Oil, for frying
  • 1 Jar Stancato’s Sunday Premier Sauce
  • 2 Cups Mozzarella Cheese, Shredded
  • 2 Tbsp. Flat Leaf Parsley, fresh chopped

Directions

  1. Heat oven to 350 degrees.
  2. Season chicken with salt and pepper.
  3. Mix together the breadcrumbs and parmesan cheese.
  4. Lightly dust chicken in flour, then dip into eggs, and finally into the breadcrumbs.
  5. In a large pan, heat oil over medium high heat.
  6. Carefully place chicken into hot pan and begin cooking.
  7. Cook chicken until lightly browned on both sides, remove from pan and allow any excess oil to drain off.
  8. Place chicken in an oven safe dish or on a baking tray and top each one with Stancato’s Sunday Premier Sauce.
  9. Cover each chicken breast with mozzarella cheese and place into the oven.
  10. Bake until the internal temperature reaches 165 degrees and the cheese is melted.
  11. Garnish with parsley and additional parmesan cheese as desired.
