Chilled Seafood Salad
Serves 4
Ingredients
- ½ Pound Shrimp, cooked and chopped
- ½ Pound Scallops, cooked and chopped
- ½ Pound Lobster, cooked and chopped
- ¼ Cup Red Onion, thinly sliced
- ¼ Cup each Red and Yellow Bell Peppers, sliced
- 2 Tbsp Flat Leaf Parsley, fresh chopped
- ¼ Cup each Orange and Grapefruit Sections, diced
- 4 Ounces Stancato’s Citrus Vinaigrette
- 2 Heads Bibb Lettuce
Directions
- In a large bowl combine all the ingredients except for the dressing and lettuce.
- Mix until well incorporated and toss with the dressing.
- Adjust seasoning with salt and pepper as needed and refrigerate for at least one hour to allow flavors to develop.
- Lay the lettuce on a serving plate or platter and fill each one evenly with the seafood salad.
