Chilled Seafood Salad

Serves 4

Ingredients

  • ½ Pound Shrimp, cooked and chopped
  • ½ Pound Scallops, cooked and chopped
  • ½ Pound Lobster, cooked and chopped
  • ¼ Cup Red Onion, thinly sliced
  • ¼ Cup each Red and Yellow Bell Peppers, sliced
  • 2 Tbsp Flat Leaf Parsley, fresh chopped
  • ¼ Cup each Orange and Grapefruit Sections, diced
  • 4 Ounces Stancato’s Citrus Vinaigrette
  • 2 Heads Bibb Lettuce

Directions

  1. In a large bowl combine all the ingredients except for the dressing and lettuce.
  2. Mix until well incorporated and toss with the dressing.
  3. Adjust seasoning with salt and pepper as needed and refrigerate for at least one hour to allow flavors to develop.
  4. Lay the lettuce on a serving plate or platter and fill each one evenly with the seafood salad.
